Dairy List Alternatives

When I was becoming a vegan, I realized how many animal by-products I was consuming and they were all normalized which was milk, eggs, butter. As a result, I decided to make a list to help with identifying dairy-alternative products. 

Dairy Milk 

Instead of dairy milk there are so many options to choose from including soy, almond, coconut, oat, and rice milk. 

Eggs

Eggs are the most common form of high-energy protein for a breakfast morning and used in other forms of cooking and baking. In the morning, instead of regular eggs, try a vegan omelette!

Omelette - blend plant-based milk with silken tofu to get the same consistency as a regular egg. Next add turmeric and black salt to get the colour and sulphuric egg flavour respectively and there you go.

Scrambled eggs - Extra firm tofu can get you comparable protein nutritionally with less calories per 100g compared to chicken eggs, and so breaking up extra firm tofu and adding a little plant milk with black salt, turmeric and other seasonings of your choice can get you the same results. Here's an example of scrambled eggs you can find by Candice at Edgy Veg:  https://www.youtube.com/watch?v=RvuGh9fuq-w

Mung beans - This one is an underrated twist that requires a bit more work but worth the effort if you wanted a more diverse palette. You can soak dried mung beans in water for three hours, then add water and vegetable oil (or a plant based milk), nutritional yeast, starch, onion powder and black salt before blending to a liquid consistency in a food processor. Here’s an example you can find by Sauce Stache: https://www.youtube.com/watch?v=A1ZriDQJd0Y

Butter

Vegan butter can be made by mixing a plant-based milk (unsweetened almond or soy) with apple cider vinegar, let it sit for five minutes to allow it to curdle. Next blend this mixture with coconut oil, olive oil, nutritional yeast and salt.
