Fall Harvest Salad with Maple Dijon Vinaigrette

Want a super tasty salad recipe? Try our Fall Harvest Salad with Maple Dijon Vinaigrette! 

Take your favorite greens, add sliced apples, roasted beets, good-quality vegan cheese (we used the Almond Chevre from Pulse Kitchen), and candied walnuts. Pour vinaigrette over salad and stir. Serve right away! 

 

Vinaigrette recipe: 

Mix 2tbsp maple syrup, 2/3 cup vegetable oil, 1tbsp Dijon mustard, 1/3 cup apple cider vinegar, 1 tsp salt, 1/2 tsp pepper. Stir well. Keep extra in the fridge. 


Candied Walnuts recipe: 

- Pour 1 cup sugar in fry pan & melt on medium-high while stirring continuously. 

- Add 1/2 tsp of salt and a pinch of cayenne

- Once sugar is melted and starting to turn golden brown add walnuts and mix together

- Do not overcook! It only takes a few minutes
