Vegan Tacos

When you come home after a long day of work, Tacos are a quick and easy recipe to satisfy the taste buds while being efficient with your time. However, if you prefer a plant based alternative, you would be hard pressed to find a recipe that would suit your lifestyle preference. 


Therefore, we decided to give our readers a quick and easy recipe that would not only taste delicious but use portobello mushrooms to give that smoky meat taste so you won’t even notice the difference! 

 

Ingredients For the filling: 

  • 2 extra-large portobello mushrooms

  • 1 red bell pepper

  • ½ onion,

  • 1.4 Cup beans of your choice

Ingredients for the Chipotle Sauce:

  • 1 tbsp oil

  • 2 tbsp canned Chipotle in Adobo sauce

  • 1 garlic clove, minced

  • ½ tsp cumin

  • ½ tsp coriander

  • Salt and pepper to taste

Ingredients for the Guacamole:

  • Avocado

  • Red Onion

  • Cherry Tomatoes

  • Jalapenos

  • Cilantro

  • Lime Juice

  • Salt

Instructions

1. Preheat oven to 220C.

2. Add all the ingredients for the Chipotle Sauce into a bowl.

3. Slice the portobellos and peppers into ½ inch thick wedges. Do the same to onion, if using onion.

4. Place all the veggies onto a sheet-pan and brush on the Chipotle Sauce onto the veggies.

5. Sprinkle salt and pepper onto the veggies and put them in the oven for 20 minutes.

6. Add Guacamole 

7. Serve with taco shells and any taco toppings you prefer.
