Simple Vinaigrette

One way to love your body is to eat more salad. Especially as we navigate the last months of winter our bodies are craving the fresh greens that start to peek out, and the first of the Spring strawberries.

At Boosh we like to eat as many salads at this time of year as we can. Here’s a recipe for a simple vinaigrette that can be used to dress plain greens, or a savory fruit, nut and cheese salad like the one pictured below (we used sliced green apple, strawberries cut into hearts, crumbled Pulse Chèvre, and toasted slivered almonds with a balsamic vinaigrette.

 

Simple Vinaigrette:

  • 1/2 tablespoon shallot or mild red onion, finely minced

  • 1/2 tablespoon mustard (whole grain or dijon)

  • Juice of 1 lemon

  • 1/2 tablespoon white, red wine, or balsamic vinegar

  • 1/3 to 1/2 cup high-quality olive oil

  • Splash of sweetener of your choice (agave, maple syrup etc.)

  • Freshly ground pepper and salt (to taste)

  • Directions: Shake all of the ingredients in a screw-top jar and serve
