Ingredients:

  • Rice (any rice will do)

  • Boosh Sloppy Joe

Coleslaw

  • Red and green cabbage, grated

  • Carrots, peeled and grated

  • Green onion, sliced thinly

  • Small apple, julienned

Dressing (Use your favourite or try this easy combination)

  • ¼ cup Vegan mayo 

  • 2 Tbsp Apple cider vinegar 

  • 2 Tbsp Olive oil 

  • Salt and pepper to taste 

Directions

Prepare rice ahead of time, based on instructions for the type of rice you use. Keep warm and set aside.

While the rice is cooking, pour Sloppy Joe into a small pot and cook over medium heat until it starts to boil, remove from heat.

Place all of the vegetables in a large bowl and toss to combine for the coleslaw. 

Prepare the dressing by combining the ingredients in a small bowl. Add dressing to vegetables and toss to combine. Set aside.

In individual serving bowls, add a heaping spoonful of cooked rice followed by some Sloppy Joe. Top with coleslaw and serve immediately. Salt and pepper to taste.
