Sloppy Joe with Roasted Vegetables

This hearty dish will surprise you. Topped with Boosh Sloppy Joe, the roasted potatoes and cauliflower create the perfect bite of pure comfort food. If you like a bit of heat, you can always add some Sriracha or your favourite hot sauce to the vegetables before you roast them.


Ingredients

  • Potatoes, cubed (skin on or off, your choice)

  • Cauliflower, broken down into small florets

  • Red onion, diced

  • Olive oil

  • Boosh Sloppy Joe

Directions

Pre-heat oven to 400°F. Line a baking sheet with parchment paper and set aside (if you don’t have parchment paper you can lightly oil the baking sheet).

Toss together all of the prepared vegetables in a large bowl. Pour in olive oil and sprinkle with salt and pepper. Stir to combine. Place vegetables on prepared baking sheet and roast in oven for 20 to 30 minutes. You want the potatoes to be crispy and the cauliflower to have a bit of a crunch, but not too much. Remove from oven when done.

In individual serving bowls, add the vegetables and top with some Sloppy Joe. Salt and pepper to taste and serve immediately.
